Stage ⓘ
Temp
Start records CHG. Then Record each stage in turn; + temp logs a reading between stages.

Each finished roast teaches this bean's stage timings; the next roast starts from what it learned, then re-paces live as you crack.
Stage offsets - seconds after first crack at the base FC time. These drive the whole guide.
